Oatmeal 2.0 || Pumpkin Spice & Chai

My favorite fall breakfast dish would definitely have to be oatmeal. But like any other fall lover, I had to find a way to saturate my mornings in pumpkin spice.



  • rolled oats
  • 1 cup diced apples or pears (optional)
  • 2 tbsp. flavored honey (pumpkin spice or chai)
  • 1 tsp. vanilla extract
  • 1 tbsp. cinnamon
  • 1 tbsp. coconut sugar (regular brown sugar will also work)
  • 1.5 tbsp. chia seeds and/or slivered almonds
  • almond milk, coconut milk or greek yogurt (for topping)


Making it:

Follow the instructions on your rolled oats. Once you have the oats cooking, start by adding the diced apples or pears. I always keep my freezer stocked with pre-diced apples and pears so I have them ready when I need them — we eat a lot of oatmeal. Once you’ve added your fruit, add all the other ingredients and continue stirring regularly until it looks like it’s thickening. Then turn off the burner and continue stirring. Keep in mind that chia seeds naturally form a jelly like consistency and will thicken your oatmeal quicker than if you just use almonds. Once your oatmeal has reached a texture you like, give it a try and add more sugar and cinnamon if necessary. Then dish up and top with milk or yogurt. Enjoy!


*Tip: the amounts of honey and sugar took a lot of guess work to determine how much flavor we like in our oatmeal. Don’t be afraid to experiment! It all looks like mush in the end anyways.
